METHOD FOR PRODUCING PHOSPHATIDYL SERINE

PROBLEM TO BE SOLVED: To provide a method for producing phosphatidyl serine in high conversion and yield by the enzyme-catalyzed reaction of phosphatidyl choline to effect the base exchange in an aqueous system without using organic solvent and using a specific surfactant. SOLUTION: Phosphatidyl serine is produced by the base exchange reaction of phosphatidyl choline existing in phospholipids with serine in an aqueous system in the presence of a surfactant using phospholipase D. The surfactant is selected from glycerol fatty acid esters, sucrose fatty acid esters, sorbitan fatty acid esters and lecithins or their mixture and has an HLB of 8-16.
