PROBLEM TO BE SOLVED: To provide a specimen freezing method capable of safely freezing an organism specimen without bonding frost to the specimen. SOLUTION: An operator fits a cap 7 cooled by liquid nitrogen in the groove 2 for the cap of a cooling holder main body 1. When the specimen 10 is covered with the cap 7, water molecules present in the atmosphere around the specimen in the cap 7 are trapped (adsorbed) on the inner surface of the cooled cap 7. Next, the operator insets a pincette 13 in the pincette insertion hole 6 of the cooling holder main body 1, to which the cap 7 is attached, is immersed in liquid nitrogen. Whereupon, the cooling holder main body 1 is cooled to an extremely low temperature to freeze the specimen 10. Since the cooling holder main body 1 is cooled after water molecules in the cap are trapped on the inner surface of the cap, no frost adheres to the surface of the specimen even if the specimen is frozen.
