EXTRACTED LIQUID OF PALATABLE INGREDIENT AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To provide a method of production by which an extracted liquid of palatable ingredients can simply and efficiently be produced from raw materials at a low cost without requiring special equipment, the extracted liquid produced by the method and a soup obtained by using the liquid. SOLUTION: This extracted liquid containing the palatable ingredients is produced by heating the raw material containing the palatable ingredients and a saline solution prepared by dissolving common salt in an amount of 0.1-2.0 pts.wt. based on 100 pts.wt. of water for about 1 h to elute the palatable ingredients from the raw material. The obtained extracted liquid is used as the soup as it is or with adding other seasonings or additives.
