nonalcoholic industry. SUBSTANCE: the method deals with manufacturing beverages based upon grain extracts. The method for obtaining grain concentrate by using buckwheat or oat or wheat raw material includes fermentative hydrolysis, aqueous-alcoholic extraction with subsequent filtration, introduction of sodium benzoate or sorbic acid into ready-to-use aqueous-alcoholic extract and vacuum evaporation to obtain a weight portion of dry matters being 75±2% in a concentrate. The method enables to obtain a concentrate to be used in manufacturing nonalcoholic beverages, the application of conservants favors to increase the storage terms up to 30 d. EFFECT: higher efficiency.
