PURPOSE: Provided are a manufacturing method of red ginseng and its extract, which have excellent anticancer and antidiabetic activities, simply and cost effectively. CONSTITUTION: The manufacturing method of red ginseng is characterized by whole or partially drying undried ginseng with steam or the like. The extract of red ginseng is manufactured by indirectly heating the manufactured red ginseng in water at low temperature of 60-95 deg.C. |
