A whipped ice cream making assembly consists of a heater (1), de-aerator (2), freezer (3) and discharge (4) which are linked by tubes (6,7,8). The ice cream mixture holder (5) may be connected to the heater (1) via a supply tube (9). The tube (8) between the freezer (3) and discharge (4) may be connected to the supply tube (9) between the mixture holder (5) and heater (1), creating a circuit. An Independent claim is also included for a process for the manufacture of whipped ice cream in which the mix is heated and de-aired and fed to the freezer in which the mixture is frozen and whipped in air prior to discharge. If production is disrupted both the mix feed and discharge are stopped, and whipped ice cream is returned from the freezer to the heater and warmed. The warmed mixture is returned to de-aeration, then passed to the freezer and whipped in the presence of air. This process is repeated until the cause of disruption has been removed.
