PURPOSE: A process of preparing fermented soybeans(Chungkukjang) by adding a suitable amount of isoflavones to maximize an anticancer effect during the production thereof is provided. Whereby, the product can be effectively used as anticancer food or cancer preventive food. CONSTITUTION: Washed soybean is steamed in an earthenware steamer and the swollen soybean is added with concentrated isoflavones or a soybean embryo, aged at 40 to 45deg.C for 3 to 4 days. Thereafter, the fermented soybean is mixed with a suitable amount of salt, together with garlic, ginger and red pepper paste. |
