摘要 PURPOSE: A process of preparing multicolored knife noodles is provided by grinding natural vegetables and fruits and mixing cereal grain flour such as wheat flour and glutinous rice flour. Whereby, the product can be changed in various colors while retaining a good taste and flavor of vegetables and fruits. CONSTITUTION: A mixture of 60 to 75% by weight of cereal grain flour for noodle comprising 75 to 85% by weight of wheat flour and 15 to 25% by weight of glutinous rice flour, 0.5 to 0.8% by weight of edible oil is mixed with 25 to 40% by weight of a vegetable and fruit extract, kneaded and extruded after drying to produce multicolored noodle strips. The vegetable and fruit extract is prepared by grinding a ripe and soft persimmon, Chinese cabbage, beet roots(Beta vulgaris) and red cabbage, filtering with a filter with 50 to 150mesh and mixing 0.5 to 1.5% by weight of salt and 0.1 to 0.3% by weight of black pepper.
