PURPOSE: A process of preparing broiled food by heating pork such as sirloin, lean pork ribs or the like in an underground way is provided. Whereby, the product is well cooked at the inside and outside thereof and has a good taste and flavor. CONSTITUTION: A specified amount of pork is broiled with a black oak in an underground. Firstly, the meat is heated at 120deg.C for 60min in state where a chimney is absolutely open. Secondly, heating is continued at 90 to 95deg.C for 15hrs in state where only 40% of the chimney is closed. Lastly, heating is stopped for 4hrs in state where the chimney and a fire hole are absolutely closed with mud to slowly lower the temperature and the product is then completed after 4hrs. |
