摘要 |
PURPOSE: Provided are a novel lactic acid bacterium, Pediococcus acidilactici which is excellent in salt resistance and thermal resistance and grows well in food wastes, and its use as a fermenting agent for food wastes. CONSTITUTION: Pediococcus acidilactici(KFCC-11097) is obtained by the steps of: diluting kimchi, pickles or silage which has high salt concentration, with a saline solution; firstly separating strains having excellent productivity by using BCP(Bromo-Cresol purple agar) medium; culturing the separated strains in MRS(deMan Rogosa and Sharpe broth) broth containing sodium chloride; secondarily separating 5 of strains having excellent growth rate; sterilizing a medium containing 30 wt.% of food wastes and 2 wt.% of molasses, at 121 deg.C under 1.5 atm for 15 minutes followed by inoculating the each 5 strains and shacking culturing them at 37 deg.C with 150 rpm respectively; smearing the culture solution on BCP medium then obtaining Pediococcus acidilactici(KFCC-11097) showing the most excellent growth.
