PROBLEM TO BE SOLVED: To provide a polished rice processing method capable of easily removing rice bran remaining in the fine grooves or the like of the surface of polished rice without damaging polished rice and holding the moisture of grains of polished rice by a simple method to prevent the lowering of eating taste, and apparatus therefor. SOLUTION: The polished rice processing apparatus is equipped with a wet processing part 8 for adding moisture to raw material polished rice to stirr the polished rice, a hot adhesion material processing part 9 for mixing and stirring heated granular matter to remove rice bran of the polished rice and a separation and drying part 10 for drying the surface of the polished rice flowing down from the hot adhesion material processing part 9 while separating the granular matter.
