PROBLEM TO BE SOLVED: To provide a deterioration inhibitor/reclaimer for edible oil capable of cooking fried food at lower temperatures than ever through suppressing the consumption of the edible oil due to its absorption into the fried food during its cooking, and to provide a method for cooking such a fried food capable of tastily cooking it crisply with low absorption of an edible oil into the final fried food along with preventing the quality of the fried food from deterioration because of enabling the central temperature of the food material to be raised higher than ever through penetrating heat to the center of the food material well. SOLUTION: This deterioration inhibitor/reclaimer for edible oil is obtained by mixing and grinding together agalmatolite, porphyry, kaolinite and clay, each as a ceramic having an infrared radiation region with 5-7 μm wavelengths, followed by baking to a specified shape. The other objective method for cooking a fried food involves putting the thus obtained ceramic into a waste oil or edible oil. |
