PROBLEM TO BE SOLVED: To provide a method for producing fried eggs each trimmed to a given shape and having moist and soft feeling while given moderate scorches adequate for the fried eggs. SOLUTION: The fried egg production unit is characterized by comprising a pair of left and right endless chains 2 and 2 subject to intermittent driving, a plurality of steel plates 3 suspendedly set up on the endless chains, an annular frame transfer device 12 lying upstream of the endless chains and functioning to supply annular frames 6 with a raw egg liquid holdable on the surface of the steel plates 3, a means 23 lying downstream of the transfer device 12 and functioning to feed a raw egg liquid into the annular frames 6, a means 28 for heating the steel plates 3, a means 29 set at a downstream position just close to the heating means 28 and functioning to cool the steel plates 3, a steam heating chamber 31 set up downstream of the cooling means 29, and a means 32 set up downstream of the steam heating chamber 31 and functioning to separate the annular frames 6 and steamed eggs therein and remove the annular frames and the steamed eggs, respectively. |
