摘要 PROBLEM TO BE SOLVED: To provide a method for easily and accurately remove the abdominal meat of bonito in the form of a single fillet having excellent commercial value without dividing the meat into two. SOLUTION: The transfer starting ends of a pair of right and left clamping belts are placed close to the delivery opening end of a bonito-introducing chute, a rod-liked horizontal lower guide is placed in the middle of the lower ends between these clamping belts, the tip end of the guide is placed close to the delivery opening end of the chute and a pair of right and left semifillet knives are placed in front of the transfer starting end of the clamping belt interposing a small gap therebetween. When the beheaded bonito supplied to the chute is transferred with the clamping belts, the bonito body is thrust with the lower guide from the upper end of the abdominal cavity to the anus of the bonito and the upper ends of both side belly parts of the bonito are cut before removing the guts to obtain a single abdominal meat by transferring the bonito along the lower guide to the semifillet knives while keeping the bonito in a forwardly inclined state.
