PROBLEM TO BE SOLVED: To provide a method for producing an ester exhibiting improved melt behavior in relation to the conditions to be satisfied from industrial viewpoint in increased production yield. SOLUTION: This invention relates to a method for producing a hydroxyfatty acid ester exhibiting solid state at room temperature and having improved melt behavior. The hydroxyfatty acid ester is produced by reacting a diol or triol having at least two primary hydroxy groups and optionally secondary or tertiary hydroxy groups with a hydroxyfatty acid and/or a hydroxyfatty acid alkyl ester in the presence of an enzyme optionally in a solvent under a pressure lower than atmospheric pressure at 20-110 deg.C while removing the water or alcohol produced by the reaction.
