PROBLEM TO BE SOLVED: To produce linalool oxide or a mixture containing linalool oxide categorized into a natural substance and useful as a raw material for natural perfumery in a yield significantly improved compared with conventional technology. SOLUTION: Linalool oxide or a mixture containing linalool oxide is produced by oxidizing linalool or a mixture containing linalool in the presence of an enzyme. This invention further relates to foods and perfumery compositions containing linalool oxide or the linalool oxide-containing mixture.
