摘要 PURPOSE: Provided is a manufacturing process of ham using chicken with auxiliary ingredients in a predetermined mixing ratio. The manufactured ham is vacuum-packed and a user can take it anywhere easily. CONSTITUTION: The chicken ham is manufactured by mixing and salting 82.97-82.99% of chicken meats with the balance of auxiliary ingredients including 2.80-2.82% of soybean proteins, 2.07-2.09% of refined salts, 0.01-0.03% of sodium nitrite, 0.30-0.32% of phosphates, 0.05-0.07% of L-sodium ascorbic acid, 0.30-0.32% of L-sodium glutamate, 1.41-1.43% of refined white sugar, 0.50-0.52% of compound spice LH2, 0.12-0.14% of seasoning JM, 2.02-2.04% of barbecue sauce, 6.08-6.10% of wheat gluten, 0.04-0.06% of sesame oil, 0.40-0.42% of garlic powder, 0.07-0.09% of ginger powder, 0.53-0.55% of wheat protein, etc; heat-treating and cooling the mixture; and filling it into a pack and followed by vacuum-packing and sterilizing it.
