PURPOSE: Provided are dried croaker preserved in ginseng essence, which has excellent flavor and taste and can be stored for a long time by preventing the acidification of lipid, and its preparation method. CONSTITUTION: The manufacturing method of dried croaker preserved in ginseng essence is characterized by preparing ginseng essence by blending or pulverizing ginseng and mixing it with water, or extracting ginseng with water; preserving croaker which is washed and preserved in salts for a predetermined time to allow the ginseng essence to permeate the croaker; and taking out the croaker and drying it. |
