PURPOSE: Provided is a manufacturing method of chicken salad by mixing chicken meat and auxiliary ingredients , then vacuum-packing them. Therefore, one can easily take the chicken salad regardless places. CONSTITUTION: The manufacturing method comprises the steps of: preparing chicken meat, especially breast meat; mixing the prepared chicken meat with pickle sauce for 7-10 minutes and salting the meat for 12-15 minutes in a refrigerator; steaming the salted meat at 90 deg.C for 30 minutes in a steamer and cutting it; mixing 38-01-38.03% of the cut meat with 1.08-1.10% of refined salts, 0.01-0.03% of sodium nitrite, 0.02-0.04% of vitamin C, 1.29-1.31% of white sugar, 10.85-10.87% of potatoes, 8.68-8.70% of carrots, 15.19-15.21% of onions, 4.34-4.36% of pea, 15.19-15.21% of mayonnaise, 1.09-1.2% of potato starch, 0.87-0.89% of apple vinegar and 3.25-3.27% of corn for 5 minutes; and filling the mixture into a packing can and followed by vacuum sealing, sterilizing at 121 deg.C and quick-freezing it. |
