As a water-insoluble calcium, can be cited a calcium preparation obtained from egg shell, clam shell, animal bone, fish bone, sea urchin shell, coral, whey and calcium carbonate. According to this invention, the cave formation in the bread can be inhibited without adverse effect on the taste, flavor of the bread.
