PROBLEM TO BE SOLVED: To provide food, drink or seasoning each hardly having any coloring, with fresh feeling where bitterness and astringency is lessened, having neat taste and containing onion thin skin extract, and to provide onion extract highly containing functional substances. SOLUTION: This food, drink or seasoning is characterized by containing an extract extracted from onion thin skins in the presence of a reducing substance, and an onion thin skin extract is obtained by extraction from onion thin skins in the presence of a reducing substance. In addition, a method for producing the above-mentioned food, drink, seasoning or onion thin skin extract is provided according to the present invention. Further, the onion extracts highly containing functional substances, and functional food, drink or seasoning containing the onion extracts each excellent in health promotion are also provided. |
