PROBLEM TO BE SOLVED: To obtain an wash free rice manufacturing method capable of manufac turing wash free rice without deteriorating the quality thereof while conserving water. SOLUTION: In an wash free rice manufacturing apparatus 10, raw material polished rice is washed in a rice washing part 12 and the washed polished rice is dehydrated in a dehydration part 14 and dried in a drying part to manufacture wash free rice. Herein, pure fresh water is supplied to a finish rice washing chamber 74 from a water injection port 76A. When the dehydration liquid from the dehydration part 14 is not injected in a rough rice washing chamber 70 from a water supply port 84A, the weight ratio of pure fresh water from the water injection part 76A to the weight of raw material polished rice is set to 0.14-0.3. When the dehydration liquid from the dehydration part 14 is injected in the rough rice washing chamber 70 from the water supply part 84A, the weight ratio of pure fresh water from the water injection part 76A to the weight of raw material polished rice is set to 0.09-0.2. By this constitution, wash free rice can be manufactured without being deteriorated in its quality (eating taste or the like) while water is conserved.
