PURPOSE: Provided is an oil in water emulsion containing soy milk which has savory taste and flavor peculiar to soy milk, shows good freezing and thawing properties, prevents various adult diseases due to active ingredients of soy milk, and contributes to nutriment and health improvement. CONSTITUTION: The oil in water emulsion is characterized by containing 0.1-2.0 wt.% of a mixture of 5-50 wt.% of soy milk(based on 7.5% of soybean solid). It further contains polysorbate 60, one of sodium stearyl lactate and glycerine fatty acid ester lactate, and glycerine fatty acid ester in a ratio of 2:1:1 to 2.5:1.5:2.
