Provided are a method for preparing an onion kimchi, and the onion kimchi prepared by the method which is free from the specific sharp taste and hot taste of an onion. The method comprises the steps of washing an onion and making sheath at the lower part of the onion content; salting the onion in salt water for 2-3 hours; firstly and secondly washing the salted onion with flowing water; mixing 83-88 wt% of the salted onion with 1.5-3 wt% of a powdered red pepper, 3-6 wt% of a red pepper mixer, 4-7 wt% of glutinous rice juk(Korean rice porridge), 0.05-0.5 wt% of a sesame, 2-4 wt% of liquid salted fish, 0.1-0.3 wt% of salted shrimp, 0.4-0.8 wt% of sugar and 0.4-0.8 wt% of salt; fermenting the seasoned onion; and packaging the fermented one. |
