PURPOSE: A method for isolating and stabilizing proteins from the animal organic material are provided, thereby proteins can be stably isolated without denaturation. CONSTITUTION: The method for isolating and stabilizing proteins from the animal organic material comprises the steps of: pulverizing the animal organic material, adding water and chemical agents containing hydroxy group, and mixing them at room temperature to divide into fats and proteins; removing the floating lipid components to obtain a protein and amino acid containing solution; and inoculating a microorganism into the protein and amino acid containing solution, and fermenting the mixture to isolate the stabilized proteins and amino acids, wherein the mixed volume ratio of the animal organic material to water is 1:2 to 1:3; and the hydroxy group containing chemical agents are added in the amount of 0.1 to 1%. |
