PROBLEM TO BE SOLVED: To provide a method for producing a processed fish by which the processed fish showing good color is provided. SOLUTION: A raw material fish is obtained by excising guts of fish to obtained an incised fish. Brine containing 1-4 wt.% potassium chloride, 0.1-0.4 wt.% sodium ascorbate and 9-14 wt.% common salt is prepared. The raw material fish is soaked in the brine at a kept temperature of 0-10 deg.C for 15-30 min. The soaked raw material fish is washed with water to remove the excess brine on the surface. The washed raw material fish is dried by blowing air at 15-25 deg.C for 1-2 hr to provide a processed fish. The resultant processed fish is rapidly frozen at (-45)-(-35) deg.C, and delivered. The resultant processed fish has the same taste and texture as a conventional processed fish, and the same good color exhibiting ruddiness as a raw fish at the incised face to improve appetite and buying intention. A mellow flavor can be imparted to the processed fish, and the common salt can be reduced by substituting the common salt to allow the processed fish to be provided as a salt-reduced food.
