PROBLEM TO BE SOLVED: To provide an apparatus for frozen dessert food production, with which the hardness of a frozen dessert food (raw material of frozen dessert food) can be accurately grasped and maintained. SOLUTION: In the apparatus for frozen dessert food production equipped with a raw material tank 8 charged with the raw materials 24 of frozen dessert food, a freezer barrel 1 which is connected to the raw material tank 8 and in which the raw materials 24 of frozen dessert food is cooled by a refrigerant and make into a frozen dessert food 25, a stirrer 2 with which the raw materials 24 of frozen dessert food in the freezer barrel 1 is stirred by an electric motor as a driving source and a freezing cycle for supplying the refrigerant to the freezer barrel 1, a hardness control part 50 in which the electric motor 7 is controlled by an inverter, the hardness of the frozen dessert food 25 is judged from an output torque value 51 of the electric motor detected by an inverter control part 7A and a control signal 52 is outputted, is installed.
