PURPOSE: Provided are novel honey-strawberry jam and its preparation process. The novel jam manufactured by using strawberries as main ingredients includes nutrients and flavors of honey by adding honey as a raw ingredient. CONSTITUTION: The manufacturing method of honey-strawberry jam comprises the steps of: quick freezing strawberries at -40 deg.C within 18 hours then thawing them; mixing and dissolving 1.56-13.56 wt.% of glucose, 0-0.48 wt.% of pectin, and 0-0.50 wt.% of citric acid; mixing 35-55 wt.% of frozen strawberries, 5-65 wt.% of honey, 5-45 wt.% of sugar syrup, 1-45 wt.% of high fructose then vacuum-concentrating the mixture; adding the pectin dissolved solution above to the concentrate and vacuum-concentrating the mixture to 63 brix of sugar content; quantifying and filling the honey-strawberry jam into a container then sealing and sterilizing it at 80 deg.C for 30 minutes; and primarily cooling it at 50 deg.C. then secondarily cooling it with spraying water.
