PROCESS FOR PRODUCING CHITOSAN OLIGOSACCHARIDE USING CHITOSANASE PRODUCED BY MICROORGANISM BACILLUS SP. HSB-21

PURPOSE: A process for producing chitosan oligosaccharide using chitosanase produced by a microorganism Bacillus sp. HSB-21 is provided, thereby producing high quality product of chitosan oligosaccharide without monosugars. CONSTITUTION: The process for producing chitosan oligosaccharide using chitosanase produced by a microorganism Bacillus sp. HSB-21 comprises the steps of: dissolving chitosan having density of 2 to 30 cps in weak acid solution to produce 1 to 10% chitosan solution, then followed by adding chitosanase into the chitosan solution, and deactivating the chitosanase; filtering the reaction solution with a ceramic filter; filtering the filtrate using ultrafiltration system to fractionate digested chitosan by molecular weight or concentrating it under reduced pressure; and heat drying or freeze drying the concentrate.
