The invention concerns eps operons involved in the biosynthesis of exopolysaccharides in lactic acid bacteria, and in particular in S. thermopilus. Sequences of said operons are useful in particular for constructing novel eps operons, and for detecting, in lactic acid bacteria, the presence of genes or gene combinations involved in the synthesis of an exopolysaccharide.
