PROBLEM TO BE SOLVED: To provide a method for producing a raw material for a beverage in which an aromatic ingredient is confined in water in order to provide an aroma to the beverage filled in a can or a PET bottle using a leaf of a plant such as green tea, black tea or a herb tea as the raw material. SOLUTION: A leaf of a plant such as the tea is heated with steam to take out the aroma and the steam containing the aroma is returned to water and provide the beverage. A water-cooled type intermediate heat exchanger is used in order to raise the thermal efficiency in a production process. An ozone deodorizing treatment is carried out in order to preremove a malodor in raw material water. A deaeration treatment, a hydrogenating treatment, etc., of the raw material water and the raw material for the beverage are performed in order to prevent decomposition by oxidation of the aromatic substance. A vacuum degassing treatment, confinement, etc., in a hydrogen or a nitrogen atmosphere are further carried out prior to the use of the leaf. A fluctuation in pressure and temperature is provided in order to raise the extraction efficiency of the aromatic ingredient. Steps of rough rolling, medium rolling, fine rolling, drying, etc., of green tea are especially performed in a hermetically closed container with steam and the aroma released during the time is recovered together with the steam to thereby afford the raw material for the beverage as a by-product. |
