PROBLEM TO BE SOLVED: To provide a method for mass-producing a β-mannanase having higher enzyme reactivity at a normal temperature or having an effect even in a small amount, i.e., a high specific activity. SOLUTION: A DNA sequence encoding a protein that is derived from a bacterium belonging to the genus Bacillus, has a specific amino acid sequence and has an activity of specifically hydrolyzing β-1,4-D-mannopyranoside linkage of β-mannan to form mannose and mannooligosaccharide is provided. An expression vector containing the above DNA sequence is provided. A cell transformed by the above expression vector is provided. A method for producing a β- mannanase comprises the steps of culturing the above transformed cell and collecting the protein having the above activity in the culture is provided. A use of the protein having the above β-mannanase activity for producing a coffee drink is provided. A method for preventing the formation of precipitates in a coffee drink is provided, wherein the above protein is made to act on a coffee extract at normal temperature. |
