PROBLEM TO BE SOLVED: To provide a method of manufacturing fatty acid ester of sterol for foods composed as usable for materials for common foods, healthy foods or medicaments, excellent in qualities in sensual points such as color, odor, taste or the like and safety. SOLUTION: This method of manufacturing fatty acid ester of sterol for foods excellent in sensual points and safety comprises the steps of, synthesizing the fatty acid ester of sterol from sterols originating from vegetables and fatty acids by a lipase carrying out an ester synthesis reaction in a system at a predetermined temperature and water content in a predetermined time, carrying out devitalization of the enzyme, dehydration and removing protein of enzyme and then removing unreacted sterol and fatty acid by a molecular distillation and removing a coloring matter by absorption and then removing the odorous component by a steam distillation treatment. |
