<p>The present invention relates to a beverage extracting apparatus (10) capable of selectively generating regular coffee and espresso coffee by one apparatus and fine adjusting both of clearness of the regular coffee and a generation of crema of the espresso coffee. The regular coffee is generated by supplying hot water in a cylinder (11) and extracting concentrate solution, and espresso coffee is generated by supplying hot water and steam in the cylinder (11) and extracting concentrate solution. At that time, concentrate solution extracting pressure in the cylinder (11) can be substantially generated by applying a resistance to passage of fluid to the contracted diameter portion (20) at the part of an extracted concentrate solution discharge pass (15).
