The present invention relates to a composition and associated methods thereof for hydrolyzing lactose in a human in need thereof by oral administration having a lactose hydrolyzing amount of beta -galactosidase, an excipient, and less than about 10 wt% of a reducing sugar, wherein the composition undergoes a change in yellowness of about 45% or less after seven days at 40 DEG C/75% RH as determined by ASTM D1925.
