The machine consists of a frame with a series of separate supports (4) for joints of meat (P) such as veal shanks or turkey drumsticks, moved continuously on a step-by-step conveyor synchronised with cutting assemblies (C1, C2, C3) which divide each joint into pieces (M1, M2, M3) suitable for making dishes such as osso bucco. The stepped action is provided by a power cylinder with its rod engaging with a socket in the underside of each support in sequence, and the cutting assemblies have blades at different angles to cut each joint into a number of pieces. |
