PURPOSE: A pork cutlet prepared by using Kimchi, pine apple or seasoned green onion to reduce a high calorific value is provided which has excellent taste, flavor and palatability and is suitable for the mass-production with uniform quality. CONSTITUTION: Pork is cut to a specified size and seasoned. Vegetable food containing protein- and fat-decomposable component is added to the pork, uniformly tendered for a specified time(ST3), coated with wheat flour, egg, bread crumbs(ST4) and then fried in oil at high temperature(ST5). The vegetable food is one or two of Kimchi, pine apple or seasoned green onion.
