A preparation method of whole bean curd by mixing coagulants, including inorganic salts, organic acids, and organic salts and thereof whole bean curd, comprising: a) a process of making homogenized soybean milk by mixing fine powder of full fat active raw soybeans with soft water, using a high-speed rotating mixer b) a process of steam-aging by means of a pressure steam-aging system; c) a process of preparing cold soybean milk after cooling to 10 C, adding additives and agitating; d) a process of adding mixed coagulants including inorganic salts, organic acids, and organic salts; e) a process of sterilizing and forming by means of a far infrared steam sterilizing & forming system equipped with far infrared radiating ceramic balls, and cooling. |
