PROBLEM TO BE SOLVED: To provide a method for simply and accurately assaying inulin. SOLUTION: This method for assaying inulin is characterized in that in assaying fructose formed by enzymatically decomposing inulin, fructose dehydrogenase not to take NAD or NADP as an electron receptor is used and a formazan coloring matter formed by transmission of electron through 1-methoxy-5-methylphenazinium methylsulfate to a tetrazolium salt is assayed.
