PROBLEM TO BE SOLVED: To provide a method for producing compost with almost no generation of bad odor from organic waste and sewage sludge or animal feces by which microorganisms are used by circulating for the fermentation treatment and the treatment time of the whole processes can be reduced. SOLUTION: Microorganism having assimilating ability for sulfur and assimilating ability for nitrogen at a temperature from normal temperature to 70 deg.C, a waste material containing protein and organic waste are mixed and fermented in the presence of air while controlling the water proportion of the mixture to 35 to 55 wt.% to produce a fermented dry product. Further, sewage sludge and/or animal feces and a waste material containing protein are further mixed to the fermented dry product, and the obtained mixture is fermented in the presence of air while controlling the water proportion to 45 to 65 wt.% and dried.
