Enzymatic acylation of maltose hydroxyl comprising reaction of the substrate with vinyl ester of fatty acid under controlled conditions

Enzymatic acylation of maltose hydroxyl comprising reaction of substrates with vinyl ester of a fatty acid in a mixture of organic solvents in the presence of a lipase. This simplifies selective acylation of a primary maltose hydroxyl in the position 6- of the non-reduction extremity. The process is also applicable to oligosaccharides derived from maltose and their alkylglycosides.
