PRODUCTION OF FERMENTED SOYBEAN PASTE HAVING ANTICANCER ACTIVITY

PURPOSE: Provided is a process of preparing fermented soybean paste by adding isoflavone having excellent anticancer activity during the production of fermented soybean paste. Whereby, the soybean paste has an excellent taste and is rich in nutrient as well as having anticancer activity. CONSTITUTION: A soybean is boiled, swelled and cultured with Aspergillus oryzae for 1 to 3 month. The cultured soybean is dried, soaked in saline water and added with isoflavone, followed by aging. In the process of adding isoflavone, 1 to 30% by weight of a soybean embryo is added.
