PROBLEM TO BE SOLVED: To provide curcuma-containing unsalted noodles for dish prepared with medicinal herbs, solving the following problems: minerals and/or nourishment each of curcumin in conventional curcuma-containing noodles, have (has) not been fully utilized because of its much salt content getting mixed into the noodle in its production process, although it has been scientifically made clear that curcumin being the main ingredient of curcuma has many effects such as a hepatic strengthening action, anticancer action, antibacterial action, anti- inflammatory effect, stomachic activity, anti-thrombogenicity, diuretic activity, and skin care activity, as well as an effect of removing active oxygen regarded as the cause of all kinds of diseases, and moreover, such noodles for dish prepared with medicinal herbs as to contain a curcuma ingredient and to be produced without using any salt, have never been produced because curcuma has too much peculiar bitterness to eat raw one as it is, and therefore, only the way to eat such curcuma by powdering it to swallow the capsulated one or wrapped-with-oblate one is available. SOLUTION: This curcuma-containing unsalted noodles for dish prepared with medicinal herbs, is obtained by the following process: mashing or grinding down about 2 wt.% raw curcuma, adding honey about 2.5-3 times as much as the curcuma in the mashed or ground raw curcuma, adding the thus obtained mixture to wheat flour as much as 100 wt.% of raw material together with water about 6.5-8 times as much as the honey, and kneading the thus produced mixture to obtain noodles having medicinal virtues. |
