PURPOSE: Provided is a manufacturing method chili pepper paste containing active ingredients of a fig, therefore the chili paste contains abundant dietary fiber, iron, calcium, and polyphenol having anti-cancer activity. CONSTITUTION: The manufacturing method comprises the steps of: soaking wheat and soy beans in pure water; boiling the soaked wheat and soy beans in a cooker then dewatering them; fermenting and drying the boiled wheat and soy beans in a fermentor; pulverizing the fermented wheat and beans; boiling a fig in a cooker then heating it to make gruel; mixing glutinous rice to the fig gruel then cooling the mixture; adding unrefined salts, sugar syrup, soju(korean traditional spirit) to the gruel mixture then mixing it with the above wheat and soy bean powders; and mixing the mixture with chili pepper powder. |
