PURPOSE: Provided is a method for producing artificial rice containing nutritive and physiologically functional substances by using twin screw extruder. The prepared artificial rice has rice-like properties, quality and taste, and contains nutritive and physiologically functional substances. CONSTITUTION: The production method comprises the steps of: pulverizing selected cereals, such as rice, brown rice, glutinous rice, wheat, beans, red beans, swelled soybean proteins, millet, buckwheat, and the like, as raw materials; mixing 40 wt.% of rice, 30 wt.% of wheat, 10 wt.% of pulse, 10 wt.% of miscellaneous cereals, linking agents, and 10 wt.% of functional substances; adding water to the mixture then providing it to a twin screw extruder to extrude it; drying extruded products then hulling them. |
