Conversion of elementary sulphur to sulphide comprises incubating a microorganism which is suitable for use in food with the sulphur in the presence of a reducing sugar. Also claimed are:(a) a human or animal food containing the sulphide, and(b) the use of a reaction medium containing the flavouring agent or its reactive precursor, in a mixture with other materials rich in precursors and/or flavour reinforcers, especially soy sauce, yeast autolysate, sodium chloride, sugars, fats and flavourings. |
