PURPOSE: A process of preparing a fermented sweet rice drink(Shikhye, Korean native name) by saccharifying a pumpkin extract with malt, hard-boiled rice or the like and then adding a sweetening agent such as sugar is provided. Whereby, the drink is rich in protein, vitamins or the like as compared to conventional Shikhye and contains a lot of carotene components, which protect the gastric mucous membrane and have light orange color. CONSTITUTION: A pumpkin whose skin, seeds or the like is removed is crushed, added 3 to 5 times with water, heated at 100deg.C or more and filtered. Barley or wheat malt is mixed 3 to 8 times with warm water for 20 min and filtered. Hard-boiled rice is mixed with 15 to 20% by weight of the malt extract, heated at 50 to 60deg.C for 4 to 5 hours and added with 15 to 30% by weight of the pumpkin extract, and added with 2 to 7% by weight of a sweetening agent such as honey, sugar, glucose, oligosaccharide or the like after heating at 100deg.C for 7 to 15 min.
