摘要 PROBLEM TO BE SOLVED: To provide an additive for baked confectionery, available from a naturally occurring material, imparting baked confectionery with crisp palatability, improved feeling of melting in the mouth and deliciousness, easy to control its activity in the production process for baked confectionery, good in workability in e.g. a confectionery dough forming process, and capable of easily giving baked confectionery products of constant quality, to provide a baked confectionery having crisp palatability and improved feeling of melting in the mouth and also deliciousness, and to provide a method for producing such a baked confectionery. SOLUTION: This additive for baked confectionery contains koji (yeast). The other objective baked confectionery is produced using this additive.
