<p>A compact quick-cooking convention oven (10) for cooking a food at least partially by hot gas flow, includes a housing (12) defining (i) a cooking chamber (14) having a top (20), a bottom (22) and a support (24) therebetween and spaced above the bottom (22) for receiving and supporting a food and (ii) conduit (16) for providing gaseous communication outside the chamber (14) upwardly from the bottom (22) to the top (20). Associated with the chamber (14) are (i) adjacent the top (20), a directing device (26) for directing gas flow from the conduit (16) downwardly onto the food top and (ii) adjacent the bottom (22), return passage (28) for directing the gas flow from the directing device (26) via the conduit (16). A control independently varies without human intervention at least one of the effective volumetric flow rate and the temperature of the gas low into the chamber (14). Cooking devices are selected from microwave radiant heating (42), non-microwave radiant heating (44), convection heating (46) and combinations thereof.</p> |
