Apparatus and process for coating food items (1) with a coating material (18) such as chocolate. The coating (18) is applied by a spray head assembly (6), and the temperature of the coating material in the spray head assembly, the temperature of the space between the spray head assembly and the item to be coated and the temperature of the item to be coated are controllable. Advantageously spraying the coating material (18) under temperature controlled conditions not only reduces the amount of sprayed material which falls between the items to be coated, but also allows various types of decorative coatings to be achieved. The apparatus may comprise a guide in the form of a nose (8) of small diameter around which a conveyor belt (2) is passed which supports the items to be coated. The guide acts to fracture set excess coating material so that said coating material is released from the belt. |
